Holiday Feasting

I would have to say that my favorite holiday food is the snickerdoodle.

In case you want to dine on this fantastic treat follow this recipe.

1 ¾ cups sugar
1 tbsp. cinnamon
2 ½ cups all pourpose flour
2 tsp. cream of tartar
1 tsp. baking soda
½ tsp. salt
8 tbsp. or 1 stick of unsalted butter (softened)
½ cup vegatable shortening (Crisco)
2 large eggs

oven rack in middle position

combine ¼ cup of sugar and cinnamon in shallow dish for coating and set aside
(roll)

whisk flour, ream of tartar, baking soda, and salt together in a large bowl
and set aside

beat the butter, shortening and remaining 1 ½ cups sugar together in a large bowl using electric mixer of medium speed until light and fluffy, 3-6 min. beat in the eggs one at a time,l until incorporated about 30 seconds, scraping down the bowl and bgeaters as needed. Reduce mixer speed to low, slowly mix in flour mixture until combined about 30 seconds.

Give the dough a final stir with rubber spatula to make sure its combined

Using wet hands roll 2 tbsp. at a time of dough into balls, then roll in cinnaomon sugar to coat and lay on two parchment lined baking sheets. Spaced about 2 ½ inches apart.

Bake one sheet at a time, until edges are set and just beginning to brown but the centers are still soft and puffy. 10-12 minutes. Rotating baking sheets half way through baking

Let cookies cool on baking sheet forr 10 minutes and serve warm or transfer to wire rack to cool completely.

2 dozen yield.
